混合

冷却した煮大豆を潰し、塩切り(塩で糀菌を抑える)した糀を合わせて混合していく。その際に酵母と乳酸菌の入った種水を加え、味噌の適切な水分量に仕込む。味噌の中で塩分と水分の対流を起こすため、中に空気が入らないように力を込めて丁寧に丁寧に味噌を押していく。


Mix rice malt

The cooled soybeans are now mashed and mixed with salted rice malt (salt retards malt's activity). Fermenting agents and water are also mixed into the soybeans. Meisters then carefully add pressure to the mixture by hand, in order to rid it of air and thereby create an even blend of salt and water.


混合

將煮好的大豆冷卻過後搗碎,並混入以鹽份調整過後的麹菌。同時,注入含有酵母及乳酸菌的種菌水,以賦予味噌適量的水份。為了使空氣不跑進味噌當中而妨礙鹽份與水份在味噌中的對流,必須小心謹慎地不斷大力按壓揉捏。
