煮大豆

大豆も米と同様によく冷えた地下水で洗い、一晩浸漬する。新たに水をはった大豆を蒸気で煮る。灰汁をこまめに取り除き、不要な成分を煮流す。次に加圧により旨味成分を閉じ込め、ふっくらと蒸しあげる。これを、“半煮半蒸”と呼び、太陽の昇らぬ早朝のうちに煮大豆を仕上げる。


Boil Soybeans

Both rice and soybeans are rinsed with, and soaked in cold water overnight before they are to be 'half-boiled and half-steamed'. During the boiling process, any bitterness is removed by skimming the surface of the water. Then it is pressure-cooked in order to preserve its flavor and taste.


煮大豆

大豆也和米粒相同,以冰涼的地下水清洗,浸泡一晚。將充滿了水份的大豆以蒸氣燉煮,並仔細撈除湯面的雜質浮沫,直到不要的成份完全去除。接著以加壓的方式持續蒸煮大豆,將其精華完全封存,並以如此「半煮半蒸」的方式趁天還沒亮以前將此步驟完成。
